A high-contrast, mouth-watering sour that eliminates the need for fresh lemon juice or sugar syrups by relying on the aggressive fruit acids of living lambic.
  • 1.5 ozColonel E.H. Taylor Small Batch Bourbon (100-proof, Bottled-in-Bond)
  • 1.5 ozYoung, snappy Belgian Kriek (3 Fonteinen Kriek or 3F Intense Red)
  • 1 barspoonThin Homemade Utopias-Infused Cherry Liquid
  • Garnish1 fresh lemon twist

Smooth, stemmed crystal coupe, ice-water chilled.

  1. Chill the Coupe Prep your smooth coupe with an ice-water bath.
  2. Chill the Base In a separate mixing glass, combine the E.H. Taylor bourbon and the Utopias liquid. Add maximum ice and stir for 15 seconds.
  3. Add the Kriek Pop the cold 3F Kriek, pour 1.5 oz into the mixing glass, and give it just one gentle flick-stir.
  4. Strain Dump the ice-water from the coupe, snap it dry, strain the crimson cocktail neat, and express the lemon twist over the top.
The ultimate playground for the Taylor — its big, sweet vanilla and charred oak core balances the fiercely tart, bone-dry Kriek, while the coupe's wide bowl lets the Brettanomyces aromatics expand out safely.
