Build
- 1.5 ozWillett Family Estate 4-Year Rye (113-proof)
- 3.5 ozYoung, snappy Oude Geuze (3 Fonteinen or a crisp Boerenerf)
Glassware
Tall, narrow, straight-walled highball or Collins glass, pre-chilled.
Method
- Ice the Glass Add a single large piece of dense, clear ice to your frozen highball glass.
- Pour the Rye Pour the Willett rye directly over the ice.
- Add the Geuze Open the chilled geuze and gently pour it down the inside wall of the glass to preserve the bubbles.
- One Roll-Stir Give it exactly one quiet roll-stir with a barspoon to bind the liquids without knocking out the carbonation.
