Hommage
Blended Lambic with Raspberries & Cherries · Beersel, Belgium
Hommage begins with young lambic, macerated on hand-picked whole raspberries and sour cherries, then blended again with more lambic to bring the fruit into balance. This particular blend carries a final fruit intensity of 35.7 grams per liter, drawn from four barrels and four different brews, the base lambic itself split between 3 Fonteinen and Brouwerij Lindemans. Bottled in August 2019, it has had years in the cellar to settle before this pour.
Sight
Deep garnet red in the glass, clear, with fine persistent bubbles rising steady and no lasting head.
Nose
The cork barely clears before strawberry announces itself, carrying a foot or two across the room. Up close it resolves into something else — raspberry, cherry, a faint muskiness underneath. As the glass settles, the nose only grows more pungent.
Taste
Divine. A clean mix of raspberry and cherry. Not a lot of funk here — this is fruit doing the talking.
Mouthfeel
Well balanced, refreshing, a slight tartness carrying it through.
Finish
A moistness lingers in the corners of the mouth, and a faint warmth rises to the forehead — the only sign of the work this glass has done.
Hommage wears its fruit openly, but underneath it is still lambic — born of wild Brussels air, kissed by the spontaneous magic that no maceration can fully cover.
